coconut chia seed pudding



I've been seeing a lot of chia concoctions, from drinks to puddings, garnishes, and smoothies. Chia seeds are high in fiber and protein and unlike flax seeds it can be easily digested. They say it can even suppress appetite and keep you feeling full. I knew I couldn't find this super seed in Yangon, so when we had a chance to visit Bangkok all I could think of buying was ingredients. Thrilled to have found chia seeds at Siam Paragon, I grabbed myself about 2 kilos of it. Then my mind started to roll, what could I make with this bounty of seeds?

I've always wanted to make a pudding out of it. It's so simple, no cooking required! It's as simple as mixing a liquid of your choice, in this case coconut milk and water, add some sugar, pinch of salt and allow it to swell in the fridge for 15-20 minutes. Garnish it off with your favorite fruit, nuts, seeds, chocolate, yogurt, whatever your belly desires.








coconut chia seed pudding

3/4 cup coconut milk
1/4 cup water
2 tbsp brown sugar
pinch of salt
1/2 cup chia seeds

garnishes

banana
nuts
seeds

Mix together the first 4 ingredients until the sugar has dissolved, have a taste and adjust its sweetness. Add in the chia seeds, mix it around until all of it is coated in the liquid, cover and place it in the fridge to swell for 15-20 minutes. (you can also do this the night before) Garnish it off with your favorite toppings.
